Spanish Style Tortilla

Egg based Spanish Style tortilla with chorizo, chilli, green beans, sweet potato and rosemary. This is a simple dish and take no time  at all to cook! This is seriously easy.

Prep time - 10 Mins

Cook time - 20 Mins

The how to section..

1 x Medium red onion

1 x 50G Chorizo

1 x Fresh Red Chilli

1 x Sweet potato

4 x large free range eggs

1/2 Pack of green beans

Smoked Paprika

1 x Garlic Clove

Fresh or Dried Ginger

Manchego Cheese

Salt & pepper

 

 

Ingredients

The Spanish tortilla which i used to buy from the market in soho has inspired me to create my own. Never as good as the original but cheap, tasty and quick if you dont have the time.

To start dice your onion and place on a medium/low heat with a little rapeseed oil/olive oil until they soften but dont let them brown.

Once this is done you can add chorizo and let this cook for 2/3 minutes. Now add 1 tspn Smoked Paprika, 1/2 tspn cinnamon, 4cm cube grated ginger or 3/4 tspn of ginger powder and 1 crushed clove of garlic. Stir in all the spices.

Now dice your sweet potato into 1cm cubes and add them to the pan with half cup of water and cover for 8 mins.

Add your green beans and stir and leave to simmer for 3 mins.

Whisk up your eggs and add a pinch of salt and pepper. Reduce the heat to low and add your eggs to the mix along with some fresh thin sliced chilli. Put your grill on a medium setting now.

Once the tortilla has some colour on the bottom after 3/4 minutes wack it under the grill for a coule minutes cover with with some grated manchego and back under the grill until golden brown. There you have it!
